This week, we welcome Amy Katz, creator of the blog Veggies Save the Day.  Amy’s blog has healthy vegan recipes that are easy for anyone to make.
Amy kindly allowed us to share her Tropical Chickpea Salad recipe in addition to our interview with her.

How did you come up with the name for your blog?

My goal when choosing a name for my blog was to come up with something that would be welcoming to all, whether they are vegan, vegetarian, or flexitarian. And I also wanted it to feel fun and exciting to eat more vegetables and fruits, like they are the superheroes of our diets.

What was the first vegan blog you started reading and how did it influence you?

The first vegan blog I discovered was theppk.com. I love Isa Chandra Moskowitz’s recipes, and she makes it seem so easy to be vegan, especially for someone new to the lifestyle.

Most people become vegan for the three main reasons: our health, the planet, and the animals.  What are your personal experiences with these three topics that motivated you to go vegan?

The documentary Forks Over Knives had a big impact on me and made me realize that going vegan is the only way to be really healthy. I had always been put off by eating red meat and stopped consuming it when I was 16. But reading more online about factory farming made it easy for me to stop eating all animals. Helping the environment is also really important to me. I recommend that everyone watch Cowspiracy and learn about how our current food system is destroying the planet. I also tell people to check out all the vegan clothing, shoes, accessories, and cosmetics in stores and online. Being vegan is about so much more than what we eat.

 

Describe how you develop your delicious recipes!

When developing recipes, I like to think about what I enjoy eating, and what would be easy to make in as little time as possible and with as few ingredients as possible. I think these days people are looking for what’s simple and delicious.

What is your favorite go-to pre or post-run drink or food?

When I run in the morning, my favorite pre-run fuel is either a banana or mango and a glass of water. After I run, there’s nothing better than an acai bowl.

What is the funniest question you have been asked about being vegan?

I get a chuckle when I’m offered fish at a party or restaurant since I don’t eat meat.
I guess people forget that fish are animals, too!

What are your top three meals to impress non-vegans?

You can never go wrong with a good pasta dish. Non-vegans are especially impressed by cream sauces made from cashews. Pizza is another winner, especially if you use Miyoko’s new mozzarella-style cheese. And you can never go wrong with anything that includes avocados.

What can we expect to see from you in the future?

I already have a shirt with this expression that I sell on Zazzle. It’s the motto I live by.

You’ll need:

  • 1 can chickpeas, rinsed (1 1/2 cups)
  • 1/2 red onion, diced
  • 1 mango (any variety), cubed
  • 1 avocado, cubed
  • Handful of chopped cilantro
  • Juice of 1 lemon (3 Tbsp.)
  • 1 Tbsp. olive oil
  • 1/4 tsp. ground cumin
  • dash of chili powder
  • salt, to taste (I prefer Pink Himalayan Crystal salt)

Process

Combine all the ingredients and chill until ready to serve.

 

Serves 2-3 people as an appetizer or make a double batch for parties. | Anna’s favorite serving suggestion is to enjoy on top of toast.
