Pizza Sweet Potato

If you’ve ever wanted to make a gluten free pizza without worrying about making the crust or using a prepackaged one, try using a baked sweet potato for your crust!  It combines two comfort foods into one.


  • 1 large sweet potato
  • 2 Tbsp pizza sauce
  • 1/4 cup yellow pepper, diced
  • 1/4 cup roasted zucchini, chopped
  • 2 Tbsp red onion, chopped
  • 8 olives, quartered
  • vegan cheese, as desired
  • handful of arugula


  1. Bake the sweet potato for approximately 40 minutes at 400 degrees or until you can easily pierce it with a fork.  (If your zucchini needs to be roasted, put it in the oven for the last 20 minutes, turning it over after 10 minutes.)
  2. Cut the sweet potato in half lengthwise and smash it with a fork, keeping the skin intact.
  3. Spread 1 Tbsp of the pizza sauce over each half and add the toppings.
  4. Return to the oven for 10 minutes or until cheese melts.  Add the arugula and enjoy!
